Cherry Preserves

I used these preserves once as a "filling" in a chocolate cake. Instead of frosting I used whipped cream for the topping. It doesn't exactly fill it but rather soaks into the cake. Add some juice to the top of the cake before adding the whipped cream. It is phenomenal.

2 pounds pitted cherries
2 pounds sugar
brandy (optional)

Heat the ingredients slowly to boiling, stirring frequently. Boil 8 minutes. Let stand overnight. I suggest packing in a 10 minute water bath in sterilized jars.
