The Ultimate Cheesecake

Ingredients:

Crust:

1 & 3/4 cup graham crackers (one block)

1/4 cup sugar

1/4 cup melted butter

Cheesecake:

2 pounds cream cheese (4- 8 ounce packages)

1 cup sugar

4 eggs

1 teaspoon vanilla

Lemon zest of 1 large lemon

Sour Cream Mixture:

1 & 1/2 cups sour cream

1/4 cup sugar

1 teaspoon vanilla


Method:

Press crust into spring pan and bake at 350 degrees for 5 minutes or until fairly firm.

Beat cream cheese until smooth then add other ingredients until smooth and creamy.

Pour into crust and bake at 350 degrees for 50- 60 minutes or until no longer wiggly in center.

Remove cheesecake from oven and increase temperature to 450 degrees.

Pour sour cream mixtures on top of hot cheesecake and bake for 10 minutes at 450 degrees.
