Black Bean Chili

Ingredients:

3 cups dried black beans, soaked overnight in water or boiled with water 1 minute and soaked 2-3 hours. Or 3 cans black beans.

1 onion, chopped

5-7 garlic cloves

1 red pepper

2 teaspoons cumin

1-2 carrots, chopped

1 green pepper

2 tablespoons chili powder

1 teaspoon cayenne

Add:

1 can crushed tomatoes

Other Additions:

1 cup chopped green zucchini

1 cup chopped yellow zucchini

or 1/2 cup corn

Garnish:

chopped jalapenos

cilantro

sour cream




Method:

Brown the onion with a little oil or spray pan. Add ingredients with beans and 5 cups water. Boil/simmer for 1 hour.

Add crushed tomatoes and cook 45 minutes.

Add the other additional ingredients and cook 10 minutes.
