Cherry Cobbler

From, "The First Ladies Cookbook", recipe of Mrs. Robert Thomas, wife of State Senator from Montana. The cookbook was given to Jane by her mother for her hope-chest in 1960.

Ingredients:

8 x 8 inch greased pan

1 cup sugar

3/4 cup milk

2 teaspoons baking powder

2 tablespoon butter

1 cup flour

1/8 teaspoon salt

2 cups cherries

1 additional cup sugar

1 cup water

Optional: cream, whipped cream, or ice cream


Method:

Cream the sugar adn butter.

Add next 4 ingredients.

Pour into greased pan.

Add 2 cups cherries over which sprinkle 1 cup sugar.

Add 1 cup water, poured over all.

Bake 45-60 minutes in 350 degree oven. Check in 45 minutes.

Take it out when top is golden and crusty. Adding the water does the trick.

Other fruits such as peaches, rhubarb, pineapple, berries, plums, etc may be used. Especially good with peaches or nectarines.


Serve with cream, whipped cream or ice cream.
