Ceasar Salad

From a high school friend who visited Puerto Rico.

Ingredients:

2 heads romaine lettuce (cleaned, dried, torn into bite size pieces)

1/3 cup olive oil (or oil from anchovies can)

3 cloves garlic

2 tablespoons red wine vinegar

juice of 1/2 lemon

1 can anchovies (cut up)

1 coddled egg or 1/4 cup egg beaters

1/3 cup parmesan cheese plus extra to taste

croutons

pepper to taste


Instructions:

Combine olive oil and garlic. Allow to sit while cleaning, drying, and tearing lettuce into a bowl.

Add oil mixture to lettuce and TOSS until leaves are glistening.

Add vinegar. TOSS.

Add lemon, TOSS.

Add optional egg, TOSS.

Add Anchovies, TOSS.

Add Cheese, TOSS.

Top with extra cheese, croutons and pepper to taste.
