Belizean Chicken

1 chicken cut into pieces
1/2 cup lime juice
2 tablespoons annatto paste
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic
3 tomatoes

Pour lime juice over the chicken then rub with annatto paste.
Brown the chicken in a large skillet.
Remove from pan and brown onions.
Add garlic and tomatoes. Cook until softened.
Return the chicken to the pan and add water if needed.
Cover and let simmer for about 1 hour, until chicken is very tender, falling away from the bone.
Occasionally make sure the sauce isn't drying out. Add water as needed.
Salt to taste.
Serve with Coconut Rice and Beans.
