Pumkin Mousse

Okay, now for the super easy. Only to be made when the frost is on the pumpkin or however that goes... it's a fall kind of thing. Serve individually in a fancy glass. Or even better yet, as a tart, you know.... an itty bitty pie. But you have to know how to make crust and we all know how hard that is.

Ingredients:

2 cups pumpkin

1 teaspoon cinnamon

1 & 1/2 cups whipping cream, whipped with

2 tablespoons instant vanilla pudding mix

3/4 cup sugar

1/2 teaspoon allspice


Method:

Makes 6-8 servings.

Mix pumpkin, sugar, and spices together.

Fold in whipped cream, gently.

If you plan to serve this immediately, you can omit the pudding mix as it only helps to stabilize the cream for a long period of time.
