Caramels

Passed down from Jane. Given to her by, Ferve Groley, the mother of the pharmacist that Jane worked for the first year that she and Roger were married. This recipe has been made at Christmas time ever since.
Ingredients:
1 cup sugar
3/4 cup corn syrup
1 & 1/2 cups cream
Method:
Combine sugar, corn syrup and 1/2 cup cream into a heavy pan. Big is good.
Place over low heat and stir constantly until sugar is dissolved and mixture boils. Continue boiling until a small amount forms a soft ball (234 degrees F).
Add remaining 1/2 cup cream and boil until a small amount forms a firm ball (240 degrees).
Pour into a buttered 8 x 4 inch pan.
Do not scrape the remaining mixture out of the pan. Let stand until cold.
Mark with a sharp knife into 3/4 inch squares. Wrap in small cut plastic wrap.
