Angry Pasta
From: Peter and Charity Finch
This is the first meal that Charity made for Peter when they were first dating. Peter was hooked for life.
Ingredients:
2 can of stewed tomatoes or diced tomatoes
1 can of tomato paste
1 can of tomato sauce
olive oil
Garlic to taste, 4-6 cloves
fresh ground black pepper
dash o' salt
Italian seasoning or basil, thyme, oregano
sugar to taste, about 1/3 cup
crushed red pepper flakes, about 1 tablespoon
1 can of water, stewed tomato can
Method:
Heat olive oil in large pan.
Add garlic and fry until fragrant, about 1 minute
Add 1 can of stewed/diced tomato
Crush the tomato and add sugar, red pepper flakes, Italian seasoning, black pepper, and salt.
Boil for a few minutes.
Add remaining ingredients: tomato paste, sauce and water.
Simmer for as long as you like, the longer the better.
Serve over choice of pasta.
Serve with crusty sourdough bread to mop up the yummy sauce.
Sauce is even better the next day to serve with left-overs.
