Chicken Satay

Ingredients:

1 pound boneless chicken breast cut into thins strips or chuncks for skewers

1 teaspoon chopped/grated ginger

2 tablespoons lemon juice

2 tablespoons honey

1/2 cup water

1 teaspoon chili paste

3 tablespoons soy sauce

1 tablespoon peanut butter

Optional: cilantro and extra lemon


Method:

Thread approximately 15 skewers

Combine all ingredients except the chicken in a large pan (to fit skewers). Bring to a boil, stirring. Add chicken skewers. Baste and simmer 7-10 minutes. Remove skewers

Simmer sauce until thick and reduced. Pour over the chicken.

Can serve chilled with cilantro and extra lemon.

Optional: Cook chicken without the skewers. Grill or BBQ skewers and baste with sauce.
