Carrot and Zucchini Bars

Ingredients:

Mix in one bowl:

1 & 1/2 cups all purpose flour

3/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon ginger or pumpkin spice

1/4 teaspoon baking soda


In a separate bowl mix:

2 slightly beaten eggs

1 & 1/2 cups shredded carrot

1 cup shredded zucchini

1/2 cup raisins or dates

1/2 cup walnuts

1/2 cup oil

1/4 cup honey

1 teaspoon vanilla


Method:

Preheat oven to 350 degrees.

Combine all of the ingredients, don't over stir. Pour into a greased 13 x 9 x 2 inch pan.

Bake for 25 minutes.

Cool before frosting.


Citrus Cream Frosting:

1 package cream cheese

1 cup powdered sugar

1 teaspoon lemon or orange zest

Beat until fluffy
