Pollo Guisado-Dominican Stewed Chicken

These are my adapted recipes. For a truly Dominican-style meal, use twice as much oil and salt, and then swear a lot and watch soap operas while you eat.

Ingredients:

2 pounds of chicken, cut into pieces

1/2 cup vegetable oil

2 & 1/2 cups water

1 onion, halved and sliced

4 cloves of garlic

1 tablespoon cilantro, chopped

4 tablespoons tomato paste

2 teaspoons salt

1 bay leaf

1/2 teaspoon oregano

1/8 teaspoon of pepper

1 tablespoon of vinegar

juice of 1 small orange

1/2 of a green pepper, sliced


Method:

Wash the chicken, pat dry.

Heat the oil in a pot over medium-low heat and add the onion.

Stir and cook for a few minutes

Crush the garlic and add to the pot along with the tomato paste dissolved in a little bit of water.

Add the water, cilantro, salt, bay leaf, oregano, and pepper.

Bring to a boil and add the chicken. Cover and let simmer 30 minutes or until the chicken is cooked.

Stir occasionally and add water if too much boils off.

Add green pepper and cook 2 minutes more.

Serve over rice, or rice and beans or sweet potatoes.
