Nu Nus: AKA Chocolate No Bake Cookies
From: Teresa Kollmar
Kyle, Kris and Katie loved it when their mommy made these cookies when they were kids. Sue said they usually ate them with a spoon because they always were too soft (from not boiling long enough). Anyhow, here is the recipe Teresa uses, and if you boil it a full minute or a little longer be sure to keep stirring it so it will not burn. Use your judgement on the oatmeal. I sometimes throw in another handful because it still appears too runny. I'm also suspicious of the type of peanut butter used too as to wether it effects the consistency or not. But more oatmeal can thicken it up. Enjoy!
Ingredients:
2 cups sugar
1/2 cup milk
1/4 cup butter
1/3 cup cocoa powder
3 - 3 & 1/2 cups oatmeal
1/2 cup peanut butter
1 teaspoon vanilla
Method:
Add 1st four ingredients.
Boil 1 minute while stirring.
Mix in the rest.
Drop large spoonfuls onto wax paper.
Let cool.
