Lemon Grass Chicken

2 tablespoons oil
1 medium onion, sliced
4 cloves garlic, chopped
2 inches fresh ginger, grated
3 tablespoon lemon grass, chopped
2 teaspoons jalapeno, chopped
1 pound chicken thighs, sliced
4 teaspoons sugar
2 tablespoons fish sauce
Add 2 cups zucchini and or red pepper

Heat oil in heavy based fry pan.
Add onion, garlic, ginger, lemon greass and jalapeno. Stir 3-5 minutes over medium heat until golden.
Increase heat to high and add chicken, toss with sugar, cook 5 minutes.
Add veggies and fish sauce. Cook another 2 minutes.
Garnish with cilantro.
