Broccoli and Cheese Casserole

Traditionally served at Christmas dinner. Original version from Virginia Lusher.

Ingredients:

1 onion (minced)

4 tablespoons butter

4 tablespoons flour

2 cups skim milk

1 egg yolk

1 cup parmesan cheese

2- 2 & 1/2 pounds or 3 boxes frozen broccoli (thawed)


Method:

Sauce:

Cook onion in butter until tender.

Stir in flour until bubbly.

Add milk gradually, cooking on medium high heat. Stir constantly until thickened.

Add egg yolk and stir constantly.

Add cheese and stir constantly.

To Bake:

Put broccoli in lightly greased baking dish.

Pour sauce over and bake at 400 degrees for 20 minutes (until bubbly).
