Dutch Babies
From: Amy Trowbridge
Here's my contribution, representing the Basic Level cookers in the family.
Ingredients:
1/2 cup milk
2 eggs
1/2 cup flour
1 tablespoon butter
Optional:
fresh lemon (squeezed on first)
lemon yogurt
powdered sugar (sprinkled on last)
Other options:
fresh fruit, syrup, jam, whatever you come up with!
Method:
Preheat oven to 350 degrees.
Put the butter in a fairly large pan with high sides (i.e. cast-iron 9 inch skillet) and heat it in the oven until the butter melts.
Whisk eggs and milk together until blended. Stir in flour and whisk until batter is smooth. Pour into pan with the melted butter.
Cook 18 minutes or until it puffs up and is just golden brown on top of the puffs. It's a good idea to take a look at 15 minutes, because you definitely do not want to overcook.
Serve immediately, with the following options:
Also, you can make the Dutch Baby a little thicker and less crusty consistency by adding more egg(s).
