Ghanaian Stew

Ingredients:

1 large clove garlic, minced

1 medium onion, sliced

1/2 pound meat, cubed

1/2 cup green beans, cut 1/2 inch

1/2 cup carrot diced

or frozen mixed vegetables

5-6 medium ripe tomatoes diced, or 2 cans tomato

1-3 red chili peppers or chili powder

1/2 cup tomato paste plus 1/2 can of water

1 teaspoon salt

1 teaspoon sugar

1 Maggi cube or 1 teaspoon Maggi seasoning

1 scrambled egg

rice or Ghanaian yams


Method:

Brown the garlic, onion, and meat in oil.

Add the beans and carrots.

Cook over medium heat until tender.

Add tomato and red peppers, cook until mushy (15 minutes)

Add tomato paste and equal amount of water along with salt, sugar, and Maggi cube.

Stir and cook a little longer.

Reduce heat to low and drizzle egg into stew.

Cover (don't stir) simmer for 5 minutes.

Serve over rice or Ghanaian yams, boiled or fried.
