Mole

Ingredients:

2-3 pounds chicken pieces

4 cloves garlic

salt to taste

Mole Sauce:

Hot broth from chicken

4-5 jars of Dona Maria

3 small cans pipian (not mixture)

salt to taste

Optional:

Mexican rice and beans, salad, or tortillas



Method:

Put chicken, garlic, and salt in a large pot and cover with water. Simmer for about 30 minutes. When this is done, set the chicken aside and use hot reserved broth to make the mole sauce.

Mole Sauce:

Add some hot broth, a jar of Dona Maria and a can of pipian to a blender. Keep adding the ingredients until desired thickness. You will have to do it in batches, adding in the different ingredients as you go.

*Kris says, "If it's too spicy, add peanut butter."

Pour the sauce over the chicken and cook another 15-20 minutes until the chicken is done.

Serve with Mexican rice and beans or salad or tortillas.
