Coconut Rice and Beans

From: Julie Finch Robe and Rolf Robe

Ingredients:

2 cups long grain white rice

1 can coconut milk

1 & 1/2 cups water or enough to make 3 cups total liquid

1 can dark red kidney beans, drained and rinsed


Method:

Put ingredients in rice cooker and gently distribute the beans evenly. Do not stir the rice once cooked as this breaks up the beans.
