Two Pan Fried Rice

From Grandma Sue Lewis. My boys make big batches of this together so they can eat the left-overs for school lunches. All of the ingredients are approximates and vary according to your taste.

Ingredients:

4 cups any kind of cooked rice (really good for left over rice)

1 & 1/2 cups chopped protein options: chicken, pork, beef, shrimp, tofu, bacon

1/2 medium oil, diced

1/2 cup celery, diced

2-3 cloves garlic, minced

1 package frozen peas and carrots or any fresh veg you want to use

Other vegetable options: zucchini, cabbage, spinach, bok choy, green beans

2 eggs, scrambled

bouillon

oil

soy sauce

pepper


Method:

Use a large pot to cook rice in because all of the ingredients will be added to it.

Dissolve bouillon in water, add to big pot

In a large pan or wok:

Cook onion, celery and garlic in oil until tender, add to rice pot.

Cook protein in the onion oil, add to rice pot.

Par boil veggies in a little water until mostly cooked, add to pot.

Cook scrambled eggs, add to pot.

Clean the pan/wok.

Hot oil the pan and throw everything from the rice pot in. Fry on medium-high heat along with soy sauce and pepper, mixing continually. Fry for at least 5 minutes.
