Italian Quiches

My Aunt Pat made this for a brunch not long ago. She served it with a side salad and it made a lovely meal. You can also cut it into smaller pieces to make appetizers.

Ingredients:

3 cups very thinly sliced zucchini (other vegetables would also be good, spinach, etc.).

1/2 cup onion, chopped

handful parsley, chopped

1 clove garlic, minced

1 cup Bisquick

1/2 cup oil

1/2 cup marjoram

1/2 teaspoon seasoned salt

1/2 cup parmesan cheese

salt and pepper

4 eggs, lightly beaten


Method:

Heat oven to 350 degrees

Mix all of the ingredients together thoroughly in a large bowl.

Pour into a lightly greased 9 x 13 inch baking dish.

Bake 25 minutes, until set and lightly browned.

Cool and cut into tiny squares for appetizers or larger pieces for a meal.

May be frozen.
