Turkey Stuffing

For a 12 pound turkey... we doubled it. Now we quadruple it.
Ingredients:

3/4 cup minced onion
1 & 1/2 cups chopped celery, with leaves
1 cup butter
9 cups soft bread cubes (a little bit of wheat and rye is good)
2 teaspoons salt
1 & 1/2 teaspoons crushed sage leaves
1 teaspoon thyme leaves
1/2 teaspoon pepper

In a dutch oven or large pan cook onion and celery in butter until onion is tender.
Stir in 1/3 of the bread crumbs.
Turn into a deep bowl and add remaining ingredients.
Stuff turkey just before roasting.
