Ghanaian Light Soup

In Ghana, this is traditionally served with fufu for breakfast, lunch, and dinner. Here, I usually serve it alone as a nice brothy soup for lunch or a light supper since fufu is difficult to make and the ingredients are hard to find. You can get instant fufu mix at African import stores but it doesn't really taste as nice as the real thing so I usually don't bother.
Ingredients:
8-10 cups water
1 pounds pigs feet (you can also use chicken wings)
1 dried whole red chili pepper or more if you like spicy
1 finely chopped onion
Add:
1 large can of whole tomatoes (or 2 smaller cans)
1 pound of meat (beef or goat) cut into 1/2 inch cubes
1 Maggi cube seasoning or 1 tablespoon Maggi Seasoning Sauce (This can be found in many Asian grocery stores or import stores, but some regular stores also carry it).
Method:
In a large pot bring to a boil: water, pigs feet or wings, red chili pepper, and onion
Lower heat and simmer for 1-2 hours to make a rich broth.
Add: tomatoes and meat and simmer until meat is tender.
Remove meat and pigs feet and puree the stock.
Replace the meat.
Add Maggi seasoning
Salt to taste
